Sabudana Khichdi is served in India as a savory breakfast,
light lunch, or afternoon snack.
After rehydrating the pearls, they become fluffy and springy, similar to cooked pasta. Wrapped in crunchy crushed peanuts and spices (included in Dice 'N Spice kit) the pearls are even more savory and satisfying! We like to kick it up a notch by adding chopped chilies when we fry the potatoes. Then, just before serving, top it with a dollop of plain yogurt for mixing.
